Grilled Pork Char Siu

On the cusp of summer I feel that this recipe is very important to add to our barbecue resume. It is so often that we enjoy great American barbecue and forget the rest of the world does some sort of open fire cooking. Don’t get me wrong, I love our great Kansas City and Texas barbecue but char siuis something that just needs to be enjoyed.

I have to go back to my hometown brewery for this dish. The Golden Monkey by Victory Brewery is just perfect for this. A great Belgian style beer with a light body and herb flavor.

2lbs of pork, I like tenderloins
-1 1/2 cups of Hoisin
-1/2 cup of soy sauce
-2 tsp of fresh ginger
-1/4 cup of honey
-1/2 cup of sherry
-1 tsp of red food coloring
-2 tsp of sesame oil


1. I like to first mix all the ingredients except for my pork to create the char siu marinade. Next marinate your pork overnight smeared with a good deal of the marinade. This way you will get that nice pink layer on the meat.

2. The next day get your grill ready and hot. Grill your tenderloin on all sides for about 5 minutes a side. This will assure you a delicious piece of pork. This is one of the only things I do not season first.

3 Finally slather on a little more char siu at the end and allow your meat to rest.
