This is a great dish on its on. Crispy potatoes and delicious smoked sausage with onion and thyme is about as good as it gets. I like to eat it with eggs or just on its own. There is little you need to add to make this dish great. A tall cold beer is about the only addition this dish deserves. I prefer a deep Guinness or a Beamish.

-2 tbsp oil
-½ lb of smoked sausage (pork or beef)
-4 large Idaho potatoes
-1 large white onion sliced
-1 tsp of fresh thyme

1. Dice your sausage, onions and potatoes all into about ½ inch pieces. Cook your potatoes in salted boiling water until they are fork tender. Drain them in the colander and let them steam off the remaining water.

2. Meanwhile heat your oil in the pan over a medium high heat. Add your sausage to the pan and cook for about 2 minutes. Next add your potatoes to the pan and let them sit. This sausage and potato mix has to be left alone for 3-4 minutes to get a nice crust on the potatoes. Toss the mix a bit and add your onions.

3. Cook until the onions become tender. Add your fresh thyme and season with salt and pepper. Serve as a side for 4 or a meal for 2.
