Chicken Brew Stew
Have a sore throat? I’ve got the remedy – a nice steaming bowl of chicken soup, with beer as the secret ingredient of course. I’m lactose intolerant and can’t have soup with heavy cream or milk. So I decided to go the alternate route and try another ingredient that can also give that fullness to soup. If you add just a little bit of lager to your soup, you’ll wind up with the usual thickness that you see in restaurants.
Optional: Feel free to add in other vegetables of your choice or even meat.

Ingredients:
1 cup chopped onion
1 cup chopped celery
4 cups chicken or beef bouillon cubes
1/2 pound Cheddar cheese, grated
1/2 cup flour
Tabasco sauce
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1 12oz bottle of any lager
Directions:
- Sauté the onion and celery until it softens and put them into a large stockpot (6 cups).
- Add bouillon cubes to the pot and place over medium heat.
- Combine Cheddar cheese with the flour and stir it slowly into hot broth.
- Add Tabasco, dry mustard, and Worcestershire sauce.
- Bring to a simmer.
- Add beer and let it sit for 5 minutes.
