Berry Good Beer Pancakes

blueberryPeople have this mindset that beer can only be used for frying or cooking dinner meals. But I experimented one morning with my sister and found that the pancakes with beer came extra fluffy and fruity without having to add fruits to the batter. Get creative! Instead of fruits, you can use chocolate stout and chocolate chips. It’s a good thing this pancake recipe calls for beer. It gives you an excuse to drink before noon.

Ingredients:
-2 tablespoons butter, melted
-1 egg
-1 cup sifted all-purpose flour
-1/4 cup white sugar
-3/4 teaspoon baking powder
-1/2 teaspoon salt
-1 cup beer

Suggestions: Use fruity beers for your recipe. Try cider, blueberry, and even cherry wheat to give your pancakes flavor.

Directions:
1. In a large bowl, stir together the flour, sugar, baking powder and salt.
2. Add a beaten egg, beer and melted butter; stir with a whisk just until blended
3. Heat a skillet over fire and coat with vegetable oil or cooking spray.
4. Spoon about 1/4 cup of batter onto the hot surface for each pancake.
5. When bubbles appear on top of the pancakes, flip, and cook until browned on the other side.
***6. (Optional) Serve with fresh fruits and whip cream.

Substitution: Take the easy route and just add your beer to Bisquick mix. Follow the directions on the box and enjoy.
