Beer Baked Beans

baked_beans_recipeI came across this recipe on the Food Network and wanted to share it with everyone because the dish sounded delicious. I tried it out at home one night, and I was right! My brothers demanded second offerings. I like this recipe even more because it’s perfect for camping! This recipe can be cooked at the campsite or at home the day before. Since this dish is cooked beans, it won’t go bad. Keep it in your cooler and you’re set.

Ingredients:
-4 strips bacon
-1 medium red onion, diced
-2 (28-ounce) cans baked beans
-1/4 cup ketchup
-1/4 cup spicy brown mustard
-3 tablespoons molasses
-1 (12-ounce) bottle lager beer

Substitutions: Use turkey bacon for a lighter mean or omit it completely for our vegetarian friends.

Directions (at camp-site):
1. Preheat your pot over the campfire.
2. Slice each slice of bacon into 4 pieces. Cook until fat is rendered, but bacon is not yet crispy.
3. In the same pot with bacon fat, cook chopped onion until soft, about 5 minutes. Add remaining ingredients, stir to combine. Bring to boil, then reduce heat and simmer for 10 minutes.
4. Carefully transfer with a ladle to a 2-quart casserole dish. Place on foil-lined baking sheet and bake 45 minutes to 1 hour, or until beans are desired thickness.
