Cilantro Slaw

This recipe is easy and a great one for kids or kitchen-phobes to help out with. For a more chic fiesta, this slaw can be used to make a lovely hors d’oeuvre. Simply spread thin layer of sticky bean dip over a round tortilla chip, add a small hill of cilantro slaw and top with a dollop of Beer Guacamole. Arrange on a plate with limes and cilantro leaves for a nice presentation. In addition, the slaw is the missing ingredient in the Chipotle Chicken Tacos, which are mediocre sans Cilantro Slaw.

For the Cilantro Slaw, you will need the following ingredients:

-12 ounces purchased shredded three-color coleslaw mix (about 7 cups)
-1 cup coarsely chopped fresh cilantro
-3 tablespoons canola oil
-3 tablespoons fresh lime juice
-1/2 teaspoon coarse kosher salt
-1 tablespoon ground black pepper


Place coleslaw mix and cilantro in large bowl. Whisk olive oil, lime juice, salt, and pepper in medium bowl to blend. Add to cabbage mixture; toss to coat.

**Note: Do not overdo the olive oil. It may seem slightly dry, but it won’t when it is added to your tacos or used in your tortilla chip appetizers.
