Beer Guacamole

I apparently invented Beer Guacamole as I cannot seem to find a proper recipe for it on any website. The story is sad, but true. I had a few too many Coronas when I was making guacamole and spilled a little of the corona into the guac. Viola! Beer Guacamole was born, and I make it anytime I’m having a beer friendly fiesta. My only heeding – be sure not to put too much beer because or it will turn to avocado and beer soup. Hmm… that may not be too bad!

For my soon-to-be famous Beer Guacamole, you will need the following ingredients:

3-4 avocados
2 small vine tomatoes
3 cloves of finely diced garlic
¼ cup coarsely copped cilantro
¼ cup diced white onion
1 serrano chile
1 lime
1 teaspoon cumin
1 teaspoon paprika
salt and pepper to taste
Corona beer with lime squeezed inside
tortilla chips


1)    Pit avocados and put into large mixing bowl.
2)    Dice tomatoes removing access juices and add to avocados.
3)    Add garlic, cilantro, white onion and half of a serrano chile (unless you know you love a mouth-burning chile flavor)
4)    Add the juice from 1 lime. Stir.
5)    Add a dash of pre-limed Corona beer. Stir.
6)    Add salt and pepper to taste. If it tastes too mild, add more pepper and the rest of the chile. If it tastes to watery, add another half of an avocado.

This recipe can be doubled or tripled for large groups of people. While the instructions are simple, the chopping and dicing is somewhat time consuming, so be prepared or recruit some helpers. I always think guacamole tastes best with Corona or a similar lime-infused lager. Especially this Beer Guacamole! It looks best served with blue corn tortilla chips.
